But how hard would it be to have a lab tech say "I'll get right on that. We'll have results for you in 3 weeks." And then just skip/summarize the intervening time instead of having uber-lab-tech say "Yep, I can do that in 2 hours."

Makes little or no difference to how the show plays out, or the running time of the episode, just makes it MUCH more real.
